CLASS DETAIL:
South-Central Mexican states feature the most lavish and carefully detailed dishes in the country. Afternoon formal meals are eaten course by course, never bunched on one plate. We'll create a typical meal, course by course, graduating with a classic enchiladas de mole: about ten items pulling together into a harmonious sauce with great clarity. Learning the Mexican cooking essentials doesn’t get more deliciously vital than this!

MEAL PREPARED:
• Mushroom Soup with Corn and Guajillo Chiles
• Masa Quesadillas filled with Cheese, Avocado-Tomatillo Salsa
• Chipotle Beans with Wilted Spinach and Chochoyotes
• Pork Tenderloin in Red Mole
